While this espresso blend did not derive its name directly from its namesake's deadly viper inhabiting Central America, it is a high-octane espresso that will bite you straight up! Ferdelance developed and refined his (rather complicated) blend over many years to be the only espresso for him, but best as a pure shot.
It's a potent blend (roasted dark), but also sweet when roasted lighter, and develops a thick crema, even though there is no robusta in it. Deep and rich-flavored with heavy body and the balance you might expect from a blend so long in development.
Roast it lighter and enjoy a creamy chocolate espresso drink with a dominant nutty taste, or take it to the limit and get the bittersweet end of the spectrum. Very versatile and quite complex.

This shade-grown Sumatran coffee is a classic, so steeped in the history of this Indonesian island that the name itself is not of a region, but rather the result of a language barrier.
The flavor profile is vibrant and spicy, a heavy coffee reminiscent of the atmosphere on this tropical paradise. If you're looking for a Sumatran coffee that won't let you down, this is a go-to.

Grown at 4,800-5,500 feet. Fully washed / dried on raised beds in a greenhouse. Dark chocolate, pear and honey flavors push this balanced, mildly sweet coffee from being a regular Guatemalan to another place. I put this is in a small press pot for a perfect sunset cup, but with enough body and brightness to drink it in the morning. The colors that evening were purple and pink over the western woods, and the coffee was just as beautiful as the sky.
Roasted FC and and especially good from a press. Not especially sweet for all the caramel flavor, balanced and very, very satisfying.

Our Mocha Java is a true blend of Yemen Mocha and Indonesian Java Arabica beans creating the classic combination that may be one of the oldest blends known. These two coffee beans are a natural fit, creating a complex yet well-balanced coffee blend.
In the 15th century, coffee beans were shipped in the wooden hulls of sailing ships of sailors at the great Yemen port of Mocha. Many of these sailors arriving at the port of Mocha were coming home from Java Island, and so this is how the traditional coffee blend of Mocha and Java coffee beans occurred - a happy accident that produced this coffee blend that is still prized today as some of the best coffee.

Bali Blue Moon has been a well-known "secret" among home roasters. It is a coffee growing region that has been heavily regulated by government, which may seem like a bad thing, but it means that both the quality of the stock used, the handling, and processing are excellent. So what does all this give you?
A coffee that is smooth and somewhat syrupy in the mouth. It has an anise flavor which adds spice to the dark chocolate and vanilla bean flavors. It is a tad sweet and very complex. All of this means that it has gone beyond previous comparisons with Kona. It has a wonderful sensation that may vary a little with different roasts to include citrus notes, since these trees are often shaded with orange and tangerine trees.

Not all coffees are created equal. As we know from our Kona experiences, there are differences in the coffee from one parcel to the next - each has its own unique micro-climate. Coffee from the famed La Minita Estate is milled by itself to maintain its integrity, as opposed to being combined with many farms in a co-op situation.
This is a Rainforest Certified coffee. La Minita has brilliant acidity, a medium body, and sweet flavors of orange citrus, caramelized sugar, and fine chocolate. It is impeccably balanced with a long, satisfying finish.

A shade-grown coffee from the Indonesian island previously known as Celebes. This coffee is the "sleeper" on this site, and one of our personal favorites - an outstanding cup for those who like a clean, full-bodied, aromatic, wild and spicy, highly-complex brew. How's that for a string of adjectives! You will be able to smell the nuttiness of the freshly-brewed coffee from 100 feet away - no joke. Equally good for jump-starting your day or washing away the unpleasantries of those rare "bad days" we all have. The Toraja is a cleaner, slightly brighter cup than our other Sulawesi, the Kalossi.

Ethiopian Yergacheffe/Yirgacheffe has always been considered one of the fine, heavier-bodied coffees available, but this organic variety seems truly supercharged!
It starts right out of the grinder with an almost overwhelming aroma, an aroma that makes your mouth water...you can hardly wait to get it brewed.
A lot of coffees stimulate your nose only to let your taste buds down, but not so here: this coffee meets and exceeds the expectations your nose gave to your mouth!
LARGE is the one best word to describe the Organic Yirgacheffe. Aroma, body, brightness, and complexity are all so strong that it's like trying to balance a boulder on a nail. Perhaps that's overstating it a bit, but if you're looking for a delicate cup of coffee with a lot of subtle nuances, look elsewhere. This is bold - chocolatey with a carmelly texture, heavy fruits, and a sweet honeyness.
Roasting Level Suggested:
Medium to Medium-Dark roast.
