Washed Processing

Traits:

  • Most common processing method around the world

  • Mostly used for specialty coffee

  • Skin, pulp and mucilage are all removed using water and fermentation

  • Taste in clean acidity and more fruity, lively

Sun Dried Processing

Traits:

  • Oldest coffee processing method

  • Low cost in processing

  • Coffee cherry dries with all of the fruit still intact

  • Taste in more sugary, less acidity

Honey Processing

Traits:

  • Developed in Brazil in the 90s

  • A hybrid of the washed and sun dried process

  • Processing method is similar to the washed process but it leaves a layer of mucilage on the coffee bean

  • Coffee cherry dries with all of the fruit still intact

  • Taste in even more sugary, less fruity than sun dried processing method
